Cuisine: Making of peanuts Soup – In the world of cuisine, africans can be quite creative, making almost everything plants edibles. from the corn to pap, and from cassava to garri, from yam to pounded yam or yam flower (elubo), and so likewise with soups too.

this creativity with food does not just end with the few examples listed up here, it goes long and probably i will take a day to sort them out and list them sometimes, but for now i’ll go to my focus today.

Peanut Stew

i bet you are already thinking about what it should or could look like, trust me its beautiful and savory to the taste buds too. I came in contact with this soup while growing up in the south west part of nigeria. Growing up in a mixed home, i mean my father being Yoruba and my mom being partially fulani and yoruba, that would obviously expose me to different culture and of course meals.

It was a sunday morning after church service she decided to make us a new delicacy and an interesting one at that. Peanuts sauce we were amazed during the preparation and during the consumption, it was delicious.

And yes i had forgotten about peanuts stew, its been a decade, but of recent a friend called my attention to it, queen can you make peanuts soup he asked? my mind raced back to my mums peanuts soup and i answered yes i could. that led me to writing about this today, i would like to share my experience in preparing my mother’s famous peanut stew.

Peanuts Soup Ingredients

  • 1 cup of Peanut
  • 4 big smoked fish
  • stock fish
  • medium sized cut goat meat
  • Crayfish
  • red bell pepper
  • ponmo
  • Maggi
  • onions
  • scent leaves/ugwu
  • palm oil
  • Iru to taste

Preparation of the Peanut Soup

step 1: clean and rinse the goat meat well, rinse your stocked fish thoroughly and clean your ponmo too and add them all in a big pot. Add maggi and onion and other spices to boil for about 20 minutes.

Step 2: clean your red bell pepper and grate in your blender alongside the onion and crayfish with your iru, then scoop in a clean pot.

Step3: Add your smoked and dried fish in the pot where you scooped the pepper and crayfish mixture, Add a warm water in it and allow to cook for 5 minutes.

Step4: now take your blended or powered peanuts or groundnuts and dilute in a warm water, add the groundnut paste into the cooking pot of pepper and smoked fish.

Step5: Allow to cook for 10 minutes until you start seeing the groundnut oil come up from the soup

step6: now add your goatmeat and stock into the boiling groundnut soup. Add a little pint of palm oil or groundnut oil as you deem fit, allow it boil for a while

Step 7: add your scent leaves or ugwu to taste.

Step 8: serve your hot and delicious peanuts soup with Eba or any food of choice.
